Melissa Tillmann, marketing

manager of Comstock and Wilderness fruit pie filling and dessert toppings,

said the company is seeing a trend toward using fruit toppings in new

and imaginative ways.

"Fruit can easily be added

to every meal or snack," she said. "From cereal and waffles,

to crepes and muffins, to desserts like ice cream or cheesecake. The possibilities

don't end there you can liven up yogurt, or make a variety of smoothies."

For a delicious and versatile

variation from the norm, try the following recipe for fruit-filled dessert

(or breakfast) quesadillas.

Fruit-Filled

Dessert Quesadillas

- 10 (10 inch) flour tortillas

- 2 tsp. melted butter or margarine

- Confectioners' sugar and/or

cinnamon sugar

- 1 can (21oz.) Comstock or

Wilderness brand pie filling, any variety

- 1 tub (12 oz.) soft, low

fat cream cheese (optional)

Lightly brush one side of a

tortilla with butter. Spread the tortilla with a thin layer of cream cheese,

if desired. Spread about 1/4 cup pie filling on one-half of the tortilla,

then fold the tortilla in half, pressing slightly to seal the edges. In

a large skillet on medium-low heat, cook the tortilla until lightly browned

(about 4 min.); turn and brown the other side. To serve, dust with confectioners'

sugar or cinnamon-sugar. Each quesadilla may be served whole or cut into

3-4 wedges before serving. Serve hot.
